Old Fashioned Pea Salad

Ingredients:

4 slices bacon

2 cups sweet peas (fresh, or frozen and thawed)

3 tablespoons sour cream

3 tablespoons mayonnaise

6 dashes hot sauce (Tabasco)

juice of 1/2 lemon

1/4 cup diced red onion

1/2 cup water chestnuts, diced 

1/4 cup fresh mint, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup sliced almonds

Directions:

  1. Cook bacon slices in a frying pan over medium heat until crisp, about 2 minutes per size. Drain on a paper towel and chop. Set aside.

  2. In a medium mixing bowl, stir together sour cream, mayonnaise, hot sauce, and lemon juice. Add red onion, water chestnuts, mint, peas, and season with salt and pepper.

  3. Transfer to a serving bowl and top with bacon and sliced almonds. Refrigerate for at least 1 hour before serving.

Serves 4.
