Leftover Thanksgiving Frittata

Ingredients:

8 large eggs

1/4 cup water

1 teaspoon salt

1/2 teaspoon pepper

3 tablespoons olive oil

1/4 cup diced white or yellow onion

1 cup cubed leftover turkey meat

up to 1 1/4 cup leftover side dishes of choice, chopped into bite-sized pieces

roasted white/red/sweet potatoes

butternut squash

cooked carrots

sautéed mushrooms

hearty leafy greens

Directions:

  1. Preheat oven to 375°F.

  2. In a medium bowl, whisk together eggs, water, salt, and pepper. Set aside.

  3. In a 9” nonstick, oven-safe skillet heat oil over medium-low heat. When hot, add onion cooking until it softens and becomes translucent, about 5 minutes. Toss in turkey and side dishes of choice heating mixture until hot throughout. Add eggs into the pan and give it a quick stir. Once the egg starts to set around the edges, move pan to the oven to finish cooking. Bake for 10 minutes or until eggs are completely set. Remove from the oven and allow to cool 10 minutes before transferring to a serving plate. Enjoy it warm, room temperature, or cold.
