Miso Glazed Eggplant
Ingredients:
1 eggplant
2 teaspoons olive oil
2 tablespoons white miso paste
2 tablespoons honey
1 teaspoon sesame oil
sliced scallions and chopped cilantro for garnish
Directions:
Preheat oven to 400 degrees. Line a baking sheet with parchment paper or aluminum foil. Set aside.
Remove both ends of the eggplant. Slice eggplant into 6-8 pieces lengthwise depending on the size of the eggplant. Coat in olive oil and place on a baking sheet.
Roast eggplant until tender, about 15 minutes. Meanwhile, whisk together miso, honey, and sesame oil.
Remove eggplant from the oven and brush with the miso glaze. Broil the eggplant until lightly charred, about 4 minutes. Top with scallions and cilantro and serve.
Serves 4.
