One of my favorite post-school snacks is a smoothie. They are very versatile and packed with fresh fruit (and vegetables if you please!). My ideal smoothie has just the right amount of sweetness and is nice and thick. Smoothies can be made year-round with the help of your freezer. During the summertime, I like to buy an abundance of fresh fruit. I wash and slice all the fruit, place it on a baking sheet and into the freezer it goes. Once it is completely frozen I place the fruit into a freezer air-tight bag (such as a ziplock gallon bag). The fruit is ready for smoothie making!
My simple strawberry-banana smoothie celebrates the strawberry. I add yogurt for extra protein and a drizzle of honey for a little sweetener.
Try placing the smoothie in a bowl and top with fresh sliced strawberries, banana, granola, and some honey for a homemade smoothie bowl.
1/2 cup orange juice
1/4 cup plain yogurt
1 cup sliced strawberries, frozen
1/2 banana, frozen
1-2 tablespoons honey (optional)
- Place all ingredients in a blender and blend until smooth. Serve immediately. Makes enough for one serving.
Tips: Try adding one tablespoon of your favorite nut butter for added protein. Peanut and almond butters are my favorite. Or make a smoothie bowl. Place the smoothie mixture into a bowl and top with sliced bananas, strawberries, granola, and a drizzle of honey.
