The holidays are in full swing. I have already had my annual Tom & Jerry drink (almost like egg nog but soooo much better), baked Christmas cookies, and eaten too many appetizers.
Going from holiday party to holiday party it can be hard to keep sane remembering hostess gifts and who’s present is whose. Make life more simple for yourself by planning ahead.
Cheese balls are great appetizers because they can be made several days in advance and just require a few last minute touches. They are kid-friendly too!
Christmas Tree Cheese Ball
8 ounces cream cheese, softened
1/4 cup green onion, thinly sliced
1/3 cup roasted red bell peppers
2 cloves garlic
1 tablespoon fresh chopped parsley
1 cup sharp cheddar cheese
salt to taste
1/2 cup kalamata olives
1/2 cup green olives
rosemary sprigs for garnish
In a medium bowl, beat the cream cheese until smooth and creamy. Finely mince the garlic and add it to the bowl. Stir in remaining ingredients, seasoning with salt to taste.
Transfer cheese mixture onto a piece of plastic wrap. Using the plastic, shape the mixture into a cone to make the tree. Refrigerator for at least 1 hour before decorating the outside.
When the cheese is firm, remove from the plastic wrap and place it on a serving platter. Arrange the olives on the outside of the cheese ball, covering it completely. You may want to slice the olives in half. Finish the cheese ball with sprigs of rosemary. Serve with crackers or veggies.
